Foodie Friday: Enchilada Veggie Quesadillas

As a way of trying to save a little money on food expenses, AND to encourage higher consumption of vegetables, Tim and I have been trying to eat one meatless meal a week.  Sooo, for this edition of Foodie Friday, I want to share with you a SUPER easy and scrumptious vegetarian dish!  Recipe can be found here, courtesy of Amber. {You rock, by the way, for coming up with such a tasty dish that is also healthy!}  Read on for a fun foodie experience, as well as some helpful foodie pointers, brought to you by yours truly.  {And welcome to Foodie Friday, my friend!}

Reasons why this dish ROCKS:

  • First, it’s cheaper since it does not include meat.  Wanna find a way to pack some protein into your meal, though?  Here’s a Foodie Tip: Grab some hummus and pita bread from the store for a delightful appetizer!  Tim and I personally like the garlic flavored variety.  Another ridiculously easy, though slightly less cost-effective, way to add protein to this dish is by putting some shredded pulled pork (either from the store or a homemade kind) on top of your quesadillas.  Yummm.

  • Secondly, this dish is healthy!!  Just look at all those {colorful} vegetables.

  • Third, and maybe most importantly, this recipe calls for cheese.  Is there any singular food item in the world that is better than cheese?  The answer is NO, I don’t think so.  Cheese just makes food BETTER, and it even tastes good when paired with fruit.  Talk about an all-occasions food!

  • Do you cook for one or two – as opposed to any number greater than four – and have a difficult time finding recipes with appropriate yield?  Because the fourth reason this recipe rocks is due to the fact that you can simply store half of your chopped-up veggies, and the other ingredients called for in this recipe, until you want to make this dish again a few days later!  Because, trust me, you will have no problem eating this twice in the same week, and your prep time will be sliced in half the second time around.  BONUS.

So there you have it!  Four reasons that speak to the awesomeness of this vegetarian (or not) meal.  Incidentally, they are also compelling reasons why you should add this delectable, healthy, and altogether cheap dish to your next meal plan.  Hope you enjoy it as much as we did!

Foodie Tip: If you have a Kroger  store in your area, I highly recommend the fire roasted enchilada sauce!  So good.
